Bridor

Cutting quality-related waste by 30 percent with AI-driven production monitoring on AWS

Bridor, a global maker of premium bakery and Viennese pastry products, built its reputation on quality and consistency. As its North American operations grew, it wanted to raise the bar even further: the same quality monitoring, and faster, in every facility. Ingeno adapted its Sentinelle quality monitoring platform, which uses state-of-the-art AI and statistical analysis to predict drifts before they happen, to Bridor’s needs: every measurement is now checked against its limits within minutes of entry, and deviations reach supervisors, production managers and the quality assurance team automatically. The result: faster intervention, consistent monitoring across facilities and a 30 percent reduction in quality-related waste.

Production quality monitoring platform on AWS

Premium bakery at industrial scale

Bridor is a global manufacturer of premium bakery and Viennese pastry products for the foodservice and retail industries. Headquartered in Rennes, France, it employs several thousand people and has built its reputation on quality, consistency and operational excellence.

This project was carried out with Bridor North America (Boucherville, Quebec), whose high-volume plants produce bread, croissants and other Viennese pastries for major foodservice chains and retailers across the continent.

To maintain the same quality across facilities, Bridor continuously invests in technology for quality control, traceability and manufacturing performance.

Raising the bar: the sooner a deviation is seen, the more product is protected

Bridor’s teams already took careful measurements, entered them into digital forms and checked them in periodic manual reviews. With operations growing and each site having its own way of working, Bridor wanted one standard everywhere and deviations seen sooner.

The goal: compare every value with its limits automatically and get deviations to the right people while they can still act, without changing anything in the routines on the lines.

Sentinelle: deviations reach the right people within minutes

Ingeno adapted its Sentinelle platform to Bridor’s North American plants. It runs on AWS in live production, operated and monitored by Ingeno.

Using state-of-the-art AI and statistical analysis, it spots trends and warns before a measure drifts out of its limits.

Operators keep their digital forms. Every five minutes, Sentinelle picks up each plant’s setup (lines, products, measurements, limits, operators) and checks new measurements against their limits.

Any out-of-limit measurement alerts supervisors, production managers and the quality assurance team automatically, with phone notifications grouped by production line. Alerts are gathered in the mobile and web applications, and in-plant screens show each line’s status at a glance.

Each plant’s data is handled independently, so adding a site is simple.

It was built on time spent on the floor with Bridor’s production and quality teams (what we call UX research), shared with senior leadership, then validated on site after the pilot and refined from user feedback.

Quality-related waste down 30 percent, deviations flagged within minutes

Sentinelle is in production on 19 lines across five Bridor plants in Canada and the United States.

Quality-related waste reduced by 30 percent.

Deviations flagged within minutes of entry, ahead of the next periodic review.

Line routines are unchanged; what changes is how fast information travels. Deviations reach supervisors, production managers and the quality assurance team automatically, in time to act before a production run is affected further.

Quality monitoring is consistent across facilities: every site works from the same limits and practices, which makes performance easy to compare.

Sentinelle keeps evolving with Bridor’s needs: a historical data feature added in 2026 lets teams follow quality trends over time, a foundation that can grow with the business.

A key lesson: technology alone does not standardize quality. First came agreeing on which production measures matter and what constitutes a deviation; the platform then applied it consistently at every connected facility.

The UX research carried out by Ingeno gave us a clearer reading of user needs and of the operational issues to consider as the platform evolves. This approach allowed us to base our decisions on concrete findings and to move forward with greater clarity and confidence.
